This dish is quite similar to Baked Cabbage Casserole, except that flavored vegetables like Chinese parsley and celery are not well suited to this dish.
Ingredients:
10oz. cabbage 1T butter or cheese
8oz. cauliflower 1/2c flour
1/2 can asparagus 1.5c consomme
6T lard, butter or cooking oil
1t sugar 1.25t salt
Procedure:
1. Pre-heat oven to 450°-500°F.
2. Wash and cut cabbage into thick pieces. Cook the cabbage (stalk end down) in boiling water until tender, and remove. Then cut cauliflower into small bunches and boil for two minutes.
3. Heat oil over medium flame. Add flour and fry over a low fire for two minutes.
4. Add consomme, salt, and sugar to cabbage and cauliflower and boil for four minutes. Add asparagus, and boil another minute. Drain, and place in a serving dish.
5. Stir the juice from the boiled vegetables with the oil and flour mixture until thick. Spread on top of vegetables.
6. Dot with butter and bake for ten minutes or until golden brown.
