Ingredients:
2 cups plain wheat flour, 2 cups cake flour, some water.
Method:
1. Mix the flour, add water, and knead to make a dough. Let stand for 25 minutes. Knead again to make it smooth and a little stiff. Divide into 5 or 6 parts.
2. Shape each round, then flatten slightly. Press the edges between thumb and index finger to make a swirl pattern.
3. Place huo-shao in a preheated 450°F oven. Bake till both sides are browned and the center juts out. During baking, remember to turn them over.
Notes:
1. The crust of huo-shao is very hard and crisp. Those who do not have strong teeth can soak it in soup, and then eat it.
2. It is one of the most popular Chinese dry provisions.
