This is a famous dish from Fukien province. The ingredients and method are as follows: 1. Cut up 1 lb. of pork tenderloin into 14 slices, and pound each slice with the back of knife.
2. Cut green onions into 14 5-cm long pieces. Soak two dried mushrooms, and remove stalks. Boil one bamboo shoot and cut into 3/2" long pieces. Soak one leek in boiling water and separate it into three or four strings.
3. Place on each slice of pork a piece of mushroom, a piece of bamboo shoot and green onion, then roll. Each pork roll should be tied with a string of leek or fastened with a toothpick. Finally, the rolls should be steeped in soy sauce and wine for about 15 minutes.
4. Deep fry the pork rolls in hot oil about one minute until brown, remove and drain the oil from pan.
5. Stew the fried pork rolls with remaining marinate sauce, add sugar, wine, vinegar and boiling water, cook about 30 minutes.
6. When the sauce is reduced to half a cup, add sesame oil and the dish is ready to serve.
