Tan Ts'ai (dried mussel), is a rich source of natural nutrients. Combined with chicken it makes a savory dinnertime treat.
Ingredients:
2 chicken legs (or 1/2 chicken) one-third pound of mussel meat
1 section slice of ginger root
1 green onion
one-fifth of a bowl of water Flavor Mix:
3T soy sauce
1T rice wine
1.5Trock candy (a coarse sugar, available in most stores)
Procedure:
1. Wash chicken and pat dry. Using a cleaver or large knife, cut the chicken legs into four or five section pieces.
2. Soak the mussel meat in warm water for 30 minutes. Carefully clean the stomach area of any sand particles or impurities. Remove the surface hairs.
3.Place the chicken and mussel pieces in a pot (wok can be used). Add ginger and onion. Then add the remaining flavor ingredients and water.
4. Bring the mixture to a boil under a high flame. Reduce flame and simmer 10 to 20 minutes. Remove and serve.
