Taiwan Cuisine
Although Taiwan cuisine has in large part become mixed with regional cooking from the mainland, there are still quite a few local dishes that are characteristic and delicious.
Steamed Meat with Egg Yolks is a dish that is both filling and tasty. It goes well with rice and is one of the items most commonly offered at roadside stands and night market eateries.
Ingredients
pig's belly 150 grams
salted egg yolks 1-1/2
(1) pickled cucumber a small amount
winter melon a small amount
white pepper powder a small amount
MSG 1/3 tsp.
sugar 1/8 tsp.
clear soy sauce 1 tsp.
Directions
1. Chop up the pig's belly, pickled cucumber, and winter melon and mix them together with (1).
2. Steam the salted egg yolks and cut them in half.
3. Place the eggs in a metal cup lined with wax paper rubbed on either side with cooking oil (to prevent sticking), and then add the meat mix.
4. Steam the cup in a steamer at high heat for 25 minutes, then remove contents and serve on a plate.

Notes
This dish is simple to make, and many families serve it along with rice gruel for breakfast. The juice is especially tasty and goes well with rice. It's not very well suited for people with high blood pressure though, because of its high cholesterol content.
