Delicious, nutritious Vegetarian Stuffed Peppers are an excellent source of fiber and are recommended for people on diets and suffering from constipation.
Ingredients:
2 green peppers
2 squares of tofu (available in all markets)
3T shredded pickled vegetables
3T shredded, minced mushrooms
1T minced water chestnuts
1T shredded carrot
1/2T minced onion
6 soupspoons salad oil
2t sesame oil
1 egg white
3/4 bowl (rice bowl size) of stock (pork, chicken or beef)
2T cornstarch
1/2t salt (for marination of ingredients)
Flavor Mix Ingredients:
2T soy sauce
1T sugar
1/2t salt
Procedure:
1. Thoroughly wash the green peppers. Using a sharp knife slice the peppers length-wise in half. Remove the seeds and core; pat dry.
2. Dust the inside of each pepper with 1/2 T of cornstarch.
3. Place tofu in a pan of salted water. Boil for 1 or 2 minutes. Remove and dry.
4. Combine chopped tofu, egg white sesame oil, remaining cornstarch, and salt with the listed shredded Vegetables. Generously stuff each pepper piece with the mixture.
5. Place peppers in a wok with heated oil. Make sure stuffed surface faces down. Fry for 2 minutes. Then add the flavor mix, turning the wok carefully so it mixes in. Cook another minute.
6. Pour in the stock, cover with lid and simmer 5 to 8 minutes. Remove and serve.
