Oxtail is an ingredient frequently used in Western dishes. Miss Fu Pei-mei has found a way to stew it in Chinese style. The ingredients and method are as follows:
1. Cut the oxtail (about 2 lbs.) into sections and soak them in boiling water for 5 minutes. Brush them clean and put them in a pan. Add slices of a tomato, 6 cups of water and 1 T. of wine. Stew about three hours over low heat until tender.
2. Cut an onion and two tomatoes into cubes and 1/2 carrot into slices. Heat 3 T. of oil in a frying pan. Fry the onion cubes a while. Then add carrot and tomato cubes, and 2 cups of oxtail stock from 1. Stew over low heat until tender.
3. Heat 3 T. of lard in a frying pan. Fry 2 T. of flour a few seconds. Then add 2 C. of oxtail stock. Mix thoroughly until it becomes a paste. Then add 3 T. of ketchup, 2 T. of soy sauce, and 1/2 t. of salt. Pour in vegetables stewed in No. 2. Stew together over low heat about 3 minutes.
4. Add the oxtail prepared in No. 1. Stir and boil again for about 3 minutes. Remove to a platter and serve.
