1 lb. glutinous rice flour
1 pot boiling water
1-2 c water
1 c bean paste stuffing
1 c sesame powder
0.5 c brown sugar
0.5 c lard
1 T fermented rice
0.25t sweet osmanthus paste (sweet olive paste)
1 egg
1 T brown sugar

1. Mix water into 3-4 T of glutinous rice flour and form small, round dumplings. Put into boiling water. Remove and place into the glutinous rice flour. Using your hands, mix with water and form small round dumplings.
2. A. Bean paste stuffing.
(l) Wash red beans then soak in water for 4-6 hrs. Strain. In another pot of boiling water add red beans and cook until they open. Allow cooling, then put in blender. (add 0.5 c water) Blend into a fine paste. Remove water by placing the beans into a dry cheesecloth and squeeze.
(2) Heat 0.5 c lard in wok then add 1 c of brown sugar and 2 c of water. Bring to a slow boil. Wait until the sugar is melted then add the bean paste. Using a higher flame, stir constantly until the water evaporates. This is to be used for stuffing. Form small balls for later use.
B. Sesame stuffing.
Into sesame flour add brown sugar and lard. Mix. Form small balls and place in dish.
3. Take a small amount of glutinous rice flour and knead between fingers and slowly form a small ball. Flatten it out in palm then add stuffing. Wrap. (It can be kneaded into different shapes or different fillings may be used.) The dumplings may be immersed directly under water and then rolled in glutinous rice powder adding an extra layer.
4. Add small rice-flour dumplings into boiling water. Stir to avoid them from sticking. Cook under medium flame for 3 minutes. Increase flame. When the dumplings float to the top, they are ready to be eaten.
5. Boil ingredients in (1), in 1 c of water then add already-cooked dumplings.
6. Food coloring may be added to the glutinous rice flour. Sweet or salty dumplings are equally tasty.
7. The dumplings may be partly dried then rolled in moistened glutinous rice. Fry in oil until golden brown. Remove excess oil. Add a bit of honey, powdered sugar, or add in broth for a tasty treat.
