Ingredients:
1/2 lb. button mushrooms
1/2 lb. straw mushrooms
12 ears dried mushrooms
1 tsp. shredded ginger
4 T salad oil or sesame oil
Flavorings:
2 tsp. salt
1 T soy sauce
1/2 T sugar
1 T dissolved corn starch
1/3 tsp. black pepper
Procedure:
1. Bring saucepan of water to boil and add 1 tsp. salt.
2. Remove stems from straw mushrooms. Put straw mushrooms along with button mushrooms into the salted boiling water. Boil mushrooms for three minutes, and remove from water. Cool them with cold water. When fully cool, immerse in clear water.
3. Remove stems from dried mushrooms. Soak in water for two hours.
4. Remove button mushrooms, straw mushrooms and dried mushrooms from water and shake dry.
5. Pour oil into frying pan. Add ginger and fry until fragrant. Next, add all of the mushrooms and flavorings and stir fry. (Add a small portion of the water used in soaking dried mushrooms according to preference.) Cover pan, simmer one half minute and serve.
