Jou-ts'ung-jung is a type of plant with mild medicinal properties used in Chinese pharmacology. It can be eaten frequently, and makes a delightful addition to chicken in brown sauce.
Ingredients:
2 chicken legs (or half chicken)
3 lobes dried black mushroom
3T salad oil
1/2 C water
1/4 tael jou-ts'ung-jung
1 section slice ginger root
1 scallion
5 cloves garlic
Flavoring:
3T soy sauce
2T Shaohsing wine
1T crystallized sugar
Procedure:
1. Wash chicken and chop into sections. Soak black mushroom for one hour, remove stems and cut into small slices. Clean jou-ts'ung-jung and cut into small slices.
2. Heat oil in frying pan and add ginger, scallion and garlic. Stir-fry until tender. Add water and heat until boiling. Add chicken, black mushroom and flavorings.
3. Simmer for five minutes. Then add jou-ts'ung-jung and boil five more minutes. Remove and serve. (Pay close attention to water content. If mixture appears too dry, add a small amount of water.)
