An unusual and refreshing summer treat.
Ingredients:
11/4 lbs. jellyfish skins
3T carrots (shredded)
5C cold water
Flavoring:
1t salt
1t sugar
2T soy sauce
1T sesame oil
Procedure:
1. Slice the jellyfish into strips and soak for 20 minutes in clear water, rubbing and cleaning. Next place the strips in a colander and scald for 30 seconds in boiling water. Then immerse in cold water immediately.
2. Remove after 4 to 5 hours and squeeze dry. Pickle in a mixture of half salt and half soy sauce for 10 minutes and again squeeze dry.
3. Add the strips to a mixture of carrot shreds and the remaining flavorings and stir thoroughly. It's ready!
