Fu Pei-Mei
INGREDIENTS
1/2 1b. lean beef
1egglettuce leaves
2 oz. rice noodlessoy sauce
onions salt

DIRECTIONS
1. Dice beef into pea size pieces and mix with egg yolk, 1 Tsp soy sauce, 1/2 tsp salt, 1 tsp corn starch, wine, sesame oil, and pepper. Set aside and allow to marinate.
2. Heat oil in wok (deep frying pan) and deep fry rice noodles over high heat for 3 seconds, then remove. Crush noodles after they have cooled.
3. Fry beef in 3 Tsp oil for 2 minutes and set aside.
4. Again heat oil and fry onions until opaque. Then add 1 cup diced water chestnuts, 1/2 cup cooked and diced carrots, 1/2 cup diced mushrooms, 1/2 cup peas and fry together.
5. Add beef and seasonings (1 Tsp soy sauce, 1/2 Tsp wine, 1 tsp corn starch, 1 tsp sesame oil, and dash pepper) to #4 and fry over high heat. Add 1 Tsp hot oil to pre-fried rice noodles and cover with beef mixture.
6. Place lettuce leaves on plate for wrapping beef.
