A Chinese specialty prepared for banquets, this dish is delicious and easy to prepare.
Slice 1/2 can of abalone and 2 cooked gizzards. Cut 1 soaked squid into diamond-shaped pieces and scald. Cut 5 black mushrooms in half, and soak. Slice 5 oz. cooked Chinese ham, and shred 4 oz. cooked pig tripe.
Cut 5 oz. soaked pork tendon in half, boil for 10 seconds, then remove and immerse in cold water.
Stir-fry 2 green onions and 2 slices of ginger in 5 T. oil, then add all the above ingredients (except squid). Sprinkle with 1 T. wine, 4 T. soy sauce, 3 C. chicken soup, 1 tsp. sugar, and 1 tsp. dark brown food coloring. Cook over a high heat until boiling, then simmer for about 7 or 8 minutes.
Add squid and sliced abalone, and cook for another minute, and splash with 1 T. hot oil. Serve on a big platter and add some chicken fat to taste.
