Dai states that when he first started out, other market stall owners were pessimistic about his approach, with one providing a friendly warning, "It's going to be bland as hell if you don't add MSG!" Because the clientele of traditional markets generally consists of nearby elderly residents and the less well off, demand is mostly for salty and heavily flavored food. At first Dai wasn't sure what to do, and added MSG for one month. But being allergic to MSG himself, plus the fact that many people encouraged him to stick to his principles, he steeled himself to the idea of never adding MSG again. Little did he expect that this "foul ball" would straighten out into a home run, drawing a new type of customer from the surrounding university area into the old market.
There are a lot of schools near the Shuiyuan Market, including National Taiwan University, National Taiwan University of Science and Technology, and the Gongguan Campus of National Taiwan Normal University. As a result, 60-70% of Qinghuaxuan's most loyal customers are college kids. During winter and summer vacations, there are also many high school students from other areas who attend activities on the university campuses.
