1 whole yellow croaker, about 11/2 1b. (other white-fleshed fish may be substituted)
1 or 2 scallions, shredded (about 11/2" long shreds)
2 or 3 slices fresh ginger root, peeled and finely shredded
3T cooking oil (peanut or soy is best)
3T soy sauce
1T rice wine (sherry may be substituted)
3T water
1/2t MSG (optional)
1/2t salt
1. Wash the fish thoroughly and remove scales. Pat dry with paper towels and place on a plate.
2. Bring water in steamer to a boil, place plate with fish into steamer, and cover. Steam at a full boil for five minutes, then turn off heat without removing steamer cover, and let set for another five minutes. Remove plate with fish from steamer and pour off the liquid on the plate.
3. Add the cooking oil to a preheated wok or large frying pan. To the hot oil add the scallion and ginger shreds and the remaining ingredients, which have been combined in a bowl ahead of time. Stir fry until bubbly, drizzle immediately over the fish, and serve hot.
