Peng Family Tofu is a famous dish discovered accidentally by the famous chef Peng Chang- kuei. It originated in the use at his restaurant of fresh cooked meat strips and fermented and seasoned soybeans (tou-ssu) to make a tofu dish, and its fame spread.
Ingredients
Tofu 5 squares
Oil 3 cups
Starch Paste 1 tsp
Sesame Oil 1 tsp
1: Pork cut in small strips 1 tbsp
Garlic sprouts 3
Fermented and seasoned soybeans 1 tsp
Red pepper 1
2: Salt 1/5 tbsp
MSG 1/2 tsp
Soy sauce 4 tbsp
Sugar 1/2 tsp
Stock 2 cups
Directions
1. Cut the tofu in 6×4×1 cm slices. Cut the garlic into 2 cm sections. Shred the red pepper.
2. Heat three cups of oil in the fry pan or wok. Add the tofu and deep fry to a golden brown. Remove and drain.
3. Leave a tsp of oil in the pan, heat, and add ingredients in group 1. Fry briefly over medium heat. Next add the tofu and the group 2 ingredients. Cook evenly, turning often, for about five minutes. Add the starch to thicken. Add the sesame oil and stir fry, turning occasionally. Serve.
