Ingredients: 10 pig's trotters, each cut in half lengthways; wood ears fungus, shiitake mushrooms, spring onions.
Seasoning: Granulated sugar, rice wine, soya sauce (about four-fifths of a bowl), 5-6 segments of star anise.
Preparation: 1) Put pig's trotters in a pan, cover with cold water. Bring to the boil. Drain.
2) Put two tablespoons sugar in wok, heat gently until sugar changes color and begins to bubble.
3) Add trotters and stir-fry over a higher heat until they are an even golden brown color.
4) Place trotters, spring onions, wood ears fungus, shiitake mushrooms, rice wine, soya sauce, star anise (in muslin bag) into an earthenware pot. Cover with water. Bring to the boil and simmer on a low heat for 4 hours. Serve.
