現今的台灣料理,雖然大都已跟大陸各地的料理相混合,但仍有不少台灣菜頗具特色,令人一嚐難忘的好料理。

早期台灣的甜鹹菜色,主要為應付勞動人口一日五餐的需要而準備的,為使食用者不致因每天吃同樣的東西而厭煩,乃用盡巧思變化各種口味,沒想到竟也成了台灣料理中的一大特色。

種類繁多,處處可見的台灣小吃,主要的內容不離「吃飽」與「吃巧」兩大範疇,但台灣小吃卻能在擷取各地吃的精華以及國民消費能力提昇及競爭日益激烈等因素的影響下,非但能夠填飽人們的肚皮,更能兼顧到美味、奇巧。

蛋黃蒸肉,就是一道既能「吃飽」又兼顧「吃巧」的菜色,十分容易下飯,也是路邊夜市常見的料理之一。

材料:

五花肉…150公克

鹹蛋黃……1.5個

蔭瓜…………少許

冬瓜…………少許

(1)白胡椒粉……少許 味精………1/3茶匙 糖…………1/8茶匙 清醬油……1茶匙

做法:

1.五花肉、蔭瓜和冬瓜一起剁碎後,再與(1)料攪勻。

2.鹹蛋黃蒸熟後,切半備用。

3.油紙兩面抹油(以防沾黏),將油紙放進鐵杯中,先放進蛋、再填入肉料。

4.鐵杯放進蒸籠堙A用大火蒸25分鐘後取出,倒扣盤中即可。

主要營養成份:

蛋白質32.4g,脂肪37.3g,醣類1.3g,鈉433mg,膽固醇557.5mg,總熱量47.2cal.。

備註:

此道菜非常容易製作,一般家庭亦常以此為早餐稀飯的配菜,尤其蒸熟後的湯汁新鮮味美,十分下飯。然而,由於膽固醇含量稍高,高血壓患者較不宜。

Although Taiwan cuisine has in large part become mixed with regional cooking from the mainland, there are still quite a few local dishes that are characteristic and delicious.

Steamed Meat with Egg Yolks is a dish that is both filling and tasty. It goes well with rice and is one of the items most commonly offered at roadside stands and night market eateries.

Ingredients

pig's belly 150 grams

salted egg yolks 1-1/2

(1) pickled cucumber a small amount

winter melon a small amount

white pepper powder a small amount

MSG 1/3 tsp.

sugar 1/8 tsp.

clear soy sauce 1 tsp.

Directions

1. Chop up the pig's belly, pickled cucumber, and winter melon and mix them together with (1).

2. Steam the salted egg yolks and cut them in half.

3. Place the eggs in a metal cup lined with wax paper rubbed on either side with cooking oil (to prevent sticking), and then add the meat mix.

4. Steam the cup in a steamer at high heat for 25 minutes, then remove contents and serve on a plate.

Protein 32.4g; fat 37.3g; carbohydrates 1.3g; sodium 433mg; cholesterol 557.5mg; calories 47.2.

Notes

This dish is simple to make, and many families serve it along with rice gruel for breakfast. The juice is especially tasty and goes well with rice. It's not very well suited for people with high blood pressure though, because of its high cholesterol content.
